1/4 cup sugar
1-1.2 tablespoon cornstarch
1/2 cup water
2 tablespoons butter
Finely grated peel and juice of 1 lemon
Measure sugar and cornstarch into a 4-cup microwave-safe bowl or measuring cup. Gradually stir in 1/4 cup water until smooth. Then stir in remaining 1/4 cup water. Add butter.
Cook, uncovered, on high for 2 min. Stir in peel and 1/4 cup lemon juice. Continue cooking, uncovered, on high for 2 min. Stir again. Cook for another 2 min or until mixture boils and thickens slightly. Serve warm over a plain sponge cake along with vanilla ice-cream.
